Crumble for two

Winter is nearly over and to make the most of it I have been cooking a lot of typical winter foods. Tonight I made Apple and Pear Crumble. The best thing about this recipe for me is that it is based on individual servings in a ramekin dish, for a quantity of two people. I have no idea where this recipe came from and if it was originally for only two people but it is perfect for us. It is a great way of using up whatever seasonal fruit you have at home and without making excess dessert. The measurements are also easy to halve or increase depending on how many you want to serve for. Every now and then I also like to add white chocolate chips to the crumble mixture for a sweeter treat.

Fruit Crumble for Two
2 pieces of fresh fruit, chopped e.g. Apple, pear, peach, plum
4 T Rolled Oats
2 T Flour
1 T Brown Sugar
1/2 t Cinnamon
2 T Butter
1 T Brown Sugar (for fruit)
1/2 t Cinnamon (for fruit)

Put oven on to bake at 200°C. Boil fruit in some water then drain. When warm add the brown sugare and cinnamon, mixing quickly and well. Mix remaining dry ingredients then rub in butter until crumbly. Put fruit into two ramekin dishes and top with the crumble. Bake for 20-25 mins. Serve with cream, ice-cream or custard.
