The superfood Avocado is a household favourite for us. We love Avocado season and I always buy them as much as I can through summer. We also usually have an Avocado and Garlic Dressing on hand that my husband loves. Recently I have been enjoying making a Smoked Paprika Aioli from Annabel Langbein and wondered if I could use her recipe as a base to create my own Avocado & Garlic Dressing. Success! My husband and I think this is a tasty dressing that won’t last long if you are an avocado fan.
Avocado & Garlic Dressing
3/4 cup Canola Oil
1/2t Mustard (what ever you have on hand)
2T Lemon (or white vinegar if you don’t have any lemons on hand)
White pepper, a pinch
1 Avocado, mashed
1 or 2 cloves of Garlic, crushed (add amount to suit your taste)
Put oil, egg, lemon, salt and pepper in a tall narrow jug. Use a stick blender to mix together. Add mashed avocado and garlic and blend until smooth. If you would like a thinner consistency then add a little water. The recipe will make roughly 1.5 cups. Store in a jar for up to one or two weeks. You can also use a food processor if you don’t have a stick blender.
