Chocolate Nut Bars

My sweet tooth was niggling at me, so it was time to do some more baking. I wanted something suitable for Michael to take on the road as he is working out at a homeshow at the moment, and something that would use up the cornflakes sitting in my cupboard after making Afghans. Ergo, Chocolate Nut Bars from my trusty Edmonds Cookbook! Some of them ended up making their way to Michaels work and a friend who was home sick. I love spreading the joy of calories around!

Chocolate Crunch Bars
Recipe from Edmonds Cookery Book, Chocolate Nut Bars

Base:
125g Butter, softened
1 cup Sugar
1 Egg
1/4t Vanilla Essence
1 1/4 cups Flour
1t Baking Powder
2T Cocoa
1 1/4 cups Cornflakes
3/4 cup Coconut
1/4 cup Nuts of your choice, chopped

Chocolate Icing:
2 cups Icing sugar
1T Cocoa
1/4t Butter, softened
1/4t Vanilla Essence
Enough water to mix to icing consistency, perhaps 4T or so.

Method:
Cream butter and sugar until light and fluffy. Add egg and vanilla, beating well. Add sifted flour, baking powder and cocoa together and mix well. Add cornflakes, coconut and nuts, mixing well. Press mixture into greased 20×30 tin. Bake at 180°C for 25-30 minutes. Make icing by sifting flour and cocoa into a bowl, add butter and vanilla essence then mix well with water to make a thick consistency. Ice with chocolate icing when cold (use a hot knife, spatula or trowel to smooth icing over) and cut into bars. Makes 20-30 depending on how large you cut the bars.
