My blogging has been neglected recently as it has been a busy couple weeks with family visiting, attending a conference and Israel being unwell with a sore throat. He is back to eating and back to smiling lots which makes Mumma happy too. We were well enough to have a play date with a friend and her 9 month old today. For a quick and partially healthy treat I whipped up a batch of these Munchie Muesli Bars. They are quick to make and the recipe is flexible if you wanted to mix up the ingredients with nuts, dried fruit, seeds or alternate cereal. I used apricot, cranberry and sultanas in mine. They were very tasty with us both going back for seconds! These would be a great snack or lunchbox item.
Munchie Muesli Bars
1 cup Sugar
2T Golden Syrup
1 cup Flour
1t Baking Powder
1 cup Desiccated Coconut
1 cup Dried Fruit
5 Weetbix (or similar dry whole-weat breakfast cereal), crushed
Preheat oven to 180°C and grease a 20x30cm slice tin.
Put butter, sugar and golden syrup in a large pot, melting over a medium heat. Once melted add remaining I gradients and mix well. Press into tin and cook 20mins. Cut into squares or bars when when but leave in tin until cool.
