It has been a fun day of eating for me! I needed to finish up all of the fresh vegetables plus cream, eggs, feta and cheese. There is a nice stockpile of soup in the freezer ready for a quick meal later. To use up the cream I decided to give these Little Iced Lemon Mousses a whirl, quartering the recipe. I don’t really like the idea of eating cream, however I am sure I eat many other worse things without realising it. It is quite a sweet treat but the lemon and biscuit crumbs helps to balance that out a little. Instead of lemon biscuits, I just used a standard wine biscuit as that’s what was in the cupboard. This turned out to be a very quick dessert to make provided you have time for it to set in the freezer.
