Tonight is vegetarian night, with recipe inspiration from the need to use up silverbeet. I made Pumpkin and Silverbeet Risotto. This is an easy meal but slightly time restrictive as you need to babysit the rice while you cook it. The beauty of it was being able to cook it early and hubby could reheat it when he got home late tonight. The recipe could easily call for a variety of other vegetables, so it’s a good foundational recipe to keep handy.
