Tonight I needed to be able to cook dinner early and quickly. I also needed to use up several ingredients. I threw together the meal below, which I have very obviously named Chicken Pesto on Mash. I am not normally a fan of mash, but it’s quick, easy and presents well. Best of all I could do this in two stages, preparation and then cooking, all in under half an hour.
Chicken Pesto on Mash
3 kumara (sweet potato), cubed
3 potatoes, cubed
2 boneless chicken breasts, cubed
1 zucchini, sliced
1/2 onion, chopped
2 gloves garlic, finely chopped
2 small yellow capsicum, chopped
1 small green capsicum, chopped
1 can Italian style diced tomatoes, drained
1/4 cup pine nuts
1 jar basil pesto (only add enough to cover your veges and chicken)
Salt and pepper
Boil potatoes and kumara in salted water. While that is boiling, cook chicken in olive oil, then set aside, covered. Fry onion and garlic until onion is clear, then add zucchini and capsicums, cooking til they are soft. Add back chicken, then drained tomatoes. Stir then cook til heated through. Stir in pesto (only enough to cover veges and chicken) and pine nuts. Drain potato and kumara, then mash with a little butter and milk, salt and pepper. Serve chicken pesto on mash! Serves 4.
